In a pan, sauté the bell peppers, onions, and garlic.
Simmer the tomatoes with the added spices (paprika, cayenne, and cumin).
Once the eggs are cooked, crack them into the sauce, cover, and continue cooking.

Once cooked, let rice to cool.
Add chilled rice to a pan with sautéed diced vegetables and mix in beaten eggs.
Add soy sauce and any additional flavors that you like.

Place a fried or poached egg on top of the whole-grain toast.
Add the avocado slices and a dash of salt and pepper.
